Color's Healthy History

Several findings indicate color and light have been used for health treatments since the beginning of recorded time. Color therapy is possibly rooted in Ayurveda, an ancient form of medicine practiced in India for thousands of years.

Other historic roots are attributed to Chinese and ancient Egyptian culture. In traditional Chinese medicine, each organ is associated with a color. Ancient Egyptians built solarium-type rooms, which could have fitted with colored poles of glass. The sun would shine through the glass and flood the patient with color.

As late as the nineteenth century, European smallpox victims and their sickrooms were draped with red cloth to draw the disease away from the body.

Color's Family Tree

Greek philosopher Aristotle is known as the Grandfather of color theory and Sir Isaac Newton, mathematician and physicist, is considered the founding father of color theory. Newton, one of the foremost scientific intellectuals of all time was the first to bring a scientific method of investigation to study color.

Avicenna, a Persian polymath, physician and Islamic philosopher, viewed color to be of vital importance in diagnosis and treatment, and made significant contributions to chemotherapy in The Canon of Medicine.

"I See Red People …"

He wrote that "Color is an observable symptom of disease" and also developed a chart that related color to the temperature and physical condition of the body. His view was that red moved the blood, blue or white cooled it, and yellow reduced muscular pain and inflammation.

He further discussed the properties of colors for healing and was "the first to establish that the wrong color suggested for therapy would ellicit no response in specific diseases." As an example, "he observed that a person with a nosebleed should not gaze at things of a brilliant red color and should not be exposed to red light because this would stimulate the sanguineous humor, whereas blue would soothe it and reduce blood flow." His other famous works included The Book of Healing.

Colorful Recognition

Today, color and light therapy is being recognized as a complementary system to other treatments. In Europe, Dr. Peter Mandel, a German acupuncturist, developed a system of applying color and light to acupuncture points on the body. This so called 'colorpuncture' is now taught in many countries.

The power of color is fascinating, more importantly, the healing properties of color's radiant energy has a unique effect when trying to achieve balance and harmony within your whole life.

French Artist Henri Matisse said, "The chief function of color should be to serve expression as well as possible." and given today's modern society, I could not agree more.

Diabetes Treatment – Diet Therapy

A lot of people are suffering from either type 1 or type 2 diabetes and their number is constantly increasing. There is strong need to understand the role diet plays in the treatment of diabetes. If one properly manages the diet he eats he can easily overcome the major diabetes complications.

Dietary treatment for Type 1 Diabetes

1. Integrate and synchronize meals (that is, the metabolic load) with the time (s) of action of the insulin treatment to minimize high peaks of blood glucose as well as episodes of hypoglycemia. It is recommended that the individual's usual food intake is used as a basis for integrating insulin therapy into the eating and exercise patterns. Patients on insulin therapy should eat at consistent times synchronized with the time-action of the insulin preparation used.

2. Reduce saturated fat to 10% of total energy or less. People with diabetes have an increased risk of coronary heart disease and this diet change may reduce it.

3. Keep salt intake low, because people with diabetes have an increased risk of hypertension.

4. Avoid or take moderate quantity of alcohol. Large intakes carry the risk of hypoglycemia; irregular drinking can disturb glycemic control.

5. In children and adolescents should make sure intakes of essential nutrients are adequate.

Dietary treatment for Type 2 Diabetes

Dietary change has a greater potential to improve type 2 diabetes as most of them are obese diet plays a major role in controlling type 2 diabetes.

1. Reduce body weight by eating few calories and taking regular exercise, and keep at it! Even modest weight loss improves metabolic control. About three-quarters of type 2 diabetics are overweight or obese, and weight reduction is the first line of dietary management. To help patients lose weight and keep it off is a challenge for the physician and dietitian. Diabetics have a stronger incentive to lose weight because this improves their disease as well as their figure, but sulphonylureas or insulin (not metformin) tend to stimulate appetite. Some who succeed in losing weight may be able to go off medications or even go off insulin.

2. Reduce saturated fat. Increased LDL-cholesterol may be more pathogenic in type 2 diabetes than non-diabetic people.

3. Emphasize low glycemic index foods

4. Increase intake of vegetables, fruit, legumes, and whole grain cereals (which increase fiber intake and mostly have low glycemic indices).

5. Keep salt intake low and increase potassium intake.

6. Avoid excess alcohol but 1-2 drinks per day with meals are acceptable.

7. Forget carbohydrates changes

8. There is no need to be obsessed about reducing sucrose. The glycemic effect of sucrose is about the same as that of most starchy foods.

By simply following dietetic principles we diabetics can have better control on the disease and live a happy and healthy life just like non diabetics.

Food Businesses And The Law

Maintain sufficient Food Hygiene Standards is a must for any food business which is why there are many Food Hygiene Courses based upon current UK legislation.

Legislation surrounding food production and handling in the UK is always changing and evolving which means keeping up to date is really important. Most recently, in 2006, the government introduced the 'Food Hygiene Regulations Act' (HACCP) which more or less just extended the legislation passed in 1995. The earlier legislation required all food handlers to be supervised, instructed and trained in food hygiene matters to a level appropriate to their job, while the 2006 act represented this as well as two additional and important new inclusions:

1) A Food Safety Management System must be implemented and records kept demonstrating compliance with the legal regulations.

2) Businesses must identify steps critical to food safety and ensure adequate procedures are identified, implemented, maintained and reviewed using HACCP principles.

Punishments for food safety offences

Food business owners who do not complain with food hygiene legislation can receive large fines or even prison sentences. Fines can be as much as £ 5,000 and prison sentences 6 months. In more serious cases, for more extreme food safety offs, fines could be as much as £ 20,000 and perpetrators could face up to 2 years in prison.

Every local authority in the UK has the power to control the sale of unfit, unfair or sub-standard food. Environmental Health Officers, (EHOs), have the power to enter any establishment to carry out an inspection or seize samples at any reasonable time. An EHO may also pose an improvement order, close down your business, fine you or you. It is illegal to prevent them from gaining access to your food promises. Failure to co-operate with an EHO is a criminal offense. Remember that the EHO is actually there to help you. Their responsibility is to ensure that the food you produce / sell / serve to the general public is safe. If an Environmental Health Officer believes there is an imminent risk to people's health, they will issue a hygiene emergency prohibition notice and immediately close the business.

Your EHO's role is to:

  • Carry out routine inspections
  • Investigate food poisoning outbreaks
  • Investigate food complaints
  • Ensure product safety and fitness
  • Monitor conditions and hygienic operations
  • Ensure compliance with legislation
  • Offer advice
  • Take away suspect food and have it condemned if it is unsafe
  • Take companies to court for breaking food safety laws.

You will sometimes hear the words, 'Due Diligence'. This means in Law that you have taken all reasonable precautions, (shown due diligence) to ensure food safety. Before you have done everything you can probably make sure that the food you serve is safe. Written records are also a good way of proving 'due diligence'. If you can prove that you have cooked the food to the correct temperature, stored the food correctly, and served the food at the right temperature within a set time limit, these can be used as a 'due diligence defense'.

If for example you see signs of pest activity, and then you report this to your supervisor, you have shown due diligence. If your supervisor then decides to do anything about it, any fine from the EHO, (£ 5000 to £ 20,000) will be imposed on your supervisor, not you. Also should you be ill and report this to your supervisor before starting work, you have shown due diligence. If your supervisor then tells you to come to work, then once again, any fine from the EHO will be imposed on the supervisor not you. Owners and anyone who is in charge of food promises have greater legal responsibilities than food handlers. Always remember that the Law is there to protect you and more importantly to ensure that the food you produce, sell or serve to the general public is safe.

Six Food Safety Laws

  • Keep yourself & your workplace clean, and wear suitable, clean protective clothing
  • Store, prepare and display food at safe temperatures
  • Do everything possible to protect food from contamination
  • Inform your employer if they have symptoms of a food-borne illness
  • Do not do anything that would expose food to contamination
  • Do not sell food with an expired date mark or food unfit for human consumption.

Six Food Business Safety Laws

  • Premises must be registered with the local enforcement authority
  • Premises must be designed, equipped and operated in ways which prevent contamination and anything that could lead to illness or injury
  • Your business must ensure adequate washing facilities and arrangements for personal hygiene
  • Ensure all staff are trained and supervised to work hygienically
  • Food hazards must be assessed and action taken to stop or reduce risks to food safety (hazard analysis)
  • Every person that deals with food has a legal responsibility to safeguard food so that it does not cause illness or harm.

Computer Keyboards Cause Pain

Do you suffer with hand or elbow pain? Do you know you are not alone? There are literally thousands of people in the same boat.

I started typing on an old manual typewriter in high school many years ago. I was in typing class and I remember completing the exercises of the key placement and stretches. The numbers and symbols were harder because you had to reach.

When years later I was working in a doctor’s office my wrist started to ache. I made my first orthopedic doctor’s visit regarding hand pain. I was then given a cortisone injection and the problem resolved itself for years.

Now keying on a computer day in and day out for years my hand pain had returned with a vengeance.

After several hand surgeries on both hands I consider my hands “delicate”.

Many years ago my sister in law a hand therapist told me to fold a towel and place it under my keyboard.

I tried that but I found that it did not give me the cushioning I needed when touching the keyboard. I finally found a pad that worked. I cut it from a larger pad that was used for something completely different.

It worked!

I noticed the difference in my hand pain immediately. I could key on a computer for hours longer and the pain was never as severe as it was in the past.

I use an ergonomic keyboard at home and it makes a huge difference when typing for hours.

The only other option that doctor’s love to tell you is to wear a hand splint. If you have ever worn a hand splint you know that I was not a happy camper.

Now I do not wear hand splints and my hand pain is severely reduced.

I know there are thousands of men, women, and children who are suffering from hand and elbow pain from continuous keying on their computer keyboards.

My suggestion is to try a pad under your keyboard. What can it hurt?

Remember keying on a keyboard is like hitting a brick wall with your hands.

What Are Bacteria And How Do They Affect Our Food?

What are bacteria?

Before we can understand how bacteria affect your food, we need to define the term: what are bacteria?

How do we define bacteria?

Bacteria are single-celled microorganisms which can exist either as independent (free-living) organisms or as parasites (dependent upon another organism for life). They are about 0.5 to 2 micrometers in size. A grain of sand is 2 millimeters is size. This means you could fit 1000 bacterial cells into a single grain of sand. This means we can only see bacterial cells through the microscope.

Other than through the microscope, bacteria form what we call “colonies” which have millions of cells which allow us to easily see bacteria in a medium that is grown in the lab known as agar plates. This is the simplest method used, in order to identify and see bacteria. We use this method to count how many bacteria are present in for example a swab of a cutting board. Greater than 300 colonies is considered dirty and contaminated.

These were one of the very first organisms to exist on our planet, so they are very, very old and have co-existed with humans since the beginning. There are millions of different types of bacteria, some good for you and some very dangerous to your health.

Where can you find bacteria?

Bacteria live in water, soil, in plants and in animals. Bacteria are so prominent on earth that they also live in some of the most extreme environments, such as the deep ocean, hot springs and there is even evidence that bacteria lived on mars.

As an example, bacteria on a human associated level grows in your gut, on your skin and in your hair (eye-lashes included). So much so, that recent research has shown that the makeup of the different kinds of bacteria in your gut and skin is MORE unique than a fingerprint.

Bacteria also grows and survives in the food that we eat, raw meat and vegetables by design must be cooked so that we as humans can consume these foods without getting sick from the bacteria that thrive in these environments.

There are two main distinctions for bacteria which we define as gram-positive and gram-negative bacteria.

We use this distinction to group the various types of bacteria by how the look and behave. All commonly occurring bacteria fall under these two categories. Suffice to say we identify bacteria in the lab with a simple test that we use as a broad category to determine which bacteria we are looking at. This test is known as a Gram stain. This means that there are two main types of bacteria that look and behave differently from each other. With this method we are able to see bacteria under the microscope.

This test also helps us see the shape of the bacteria. There are three shapes, bacilli (rod-shaped), cocci (circular), and spirilla (corkscrew shaped).

What Do Bacteria Need to Survive?

There are 6 elements in the environment that allow bacteria to grow and survive:

Nutrient Content




In general (with bacteria there are always exceptions) we see that bacteria can survive in a very large temperature ranges. Bacteria can live between 0 to 60 °Celsius (32 – 122 °Fahrenheit), however on a human associated level they grow at their best between 20 and 45 °Celsius (68 – 113 ° Fahrenheit).

This is because the bacteria that we are concerned with have adapted to our internal bodies, in order to infect and contaminate our bodies. Therefore the absolute best temperature is 37 ° C (98 ° F).

Moisture (Water activity)

Bacteria can grow mostly in moisture rich environments. In food, bacteria love moisture rich conditions. Water activity means how much water is available in a food product. Such an example would be cucumbers, there is a high availability of water in cucumbers, lettuce and celery (95%). When compared to dried spices (5 – 50%). Most bacteria need at least 80% water to survive.

Nutrient content

As we as humans need nutrients to survive, so does bacteria. With nutrient high content, food is a perfect source of nutrients for bacteria to grow. Which is why we need to have very good hygiene standards in the kitchen. Food is an ideal environment for bacteria. The skin of humans and animals are also an example of a high nutrient source for bacteria. Bacteria require sources of carbon, nitrogen, phosphorous, iron and a large number of other minerals.

pH (acidity)

The pH or acidity level also affects how bacteria grows and how effectively bacteria can survive within the environment. Bacteria in food ranges from 5 to 8 pH. This means items such as vinegar is unlikely to allow bacteria to survive.

Lemons are always a popular food when anti-bacterial properties are mentioned. Indeed the pH does discourage the growth of bacteria, but is not a major factor when killing bacteria that occurs from cross-contamination. meats, spinach and milk are within the ideal pH range of bacteria. Yogurt has a pH just below the ideal range, and is general considered less risky than milk because of this.


Bacteria can grow in both oxygen rich and poor environments. This means sealed and unsealed products. Therefore, vacuum packed meals and foods are not free from concern. This also means exposing foods to the environment and leaving food uncovered allows bacteria to grow.


The longer bacteria are exposed to the above factors in their ideal conditions, the more established the bacterial cells become. These factors are all dependent on time, and bacteria can rapidly multiply within 15 to 45 minutes.


We now know that bacteria can survive in temperatures of between 0 – 65ºC (32 – 149ºF)

Grow best at 20 – 45 ºC (20 – 113ºF).

They rapidly multiply in 15 – 45 minutes in these ranges.

Moisture rich environments are favourable.

Can survive at pH of 3.0 – 7.5

Can survive in oxygen rich and poor conditions.

As you can see, bacteria are similar to humans in what they need to survive, hence there are human associated bacteria, and as a result, bacteria that occur in the foods that we consume.

Gastric Bypass Surgery

Gastric bypass surgery is only recommended when a correction of morbid obesity is to be done. The most common type of this form of surgery is Roux-en-Y gastric bypass surgery. In this type of surgery, the food is allowed to bypass some part of the stomach and small intestine. This leaves some of the food undigested and reduces the caloric intake.

The National Institutes of Health (NIH) has laid down specific criteria for carrying out this surgery. It is recommended only for patients having a body mass index (BMI) of 40 or more. Individuals having 35 or more BMI? S with related co morbid conditions are proposed to undergo this procedure. Here, it is only suggested for individuals who are at least 100 pounds or 45 kg more than their ideal weight.

In the United States, it is the most frequently performed operation, carried out for weight loss and also quite popular. In the year 2005 itself, in the US, there were around 140,000 gastric bypass procedures carried out. The surgery has been performed for atleast 50 years now and since, the surgeons are quite comfortable with the operation and are also aware of the risks invovled in the procedure.

In recent years, a technique called laproscopy has been used to gain entry to the abdomen. This technique is highly advantageous in comparison to the traditional methods. However, this technique requires a lot of training and expertise to be able to perform the actual operation.

The operation involves the stomach to be cut into a small pouch. The rest of the stomach and first couple of feet of small intestine are bypassed. This reduces the size of the stomach.However, since the bypassed portion of the small intestine is adept at absorbing calcium and iron, the only complications associated with this procedure are anemia and osteoporosis. The patients have to take lifelong mineral supplement for this.

The gastric bypass procedure (GBP) has been found to provide good long-term weight loss results and has also brought about definite improvements in the life of obese individuals.

The skin is the largest living, breathing organ of the body. It acts as an interface between the internal and external environments. It consist of the epidermis, dermis and the hypodermis. The epidermis is the surface layer, the layer that we see. It serves us as the protective layer. The dermis is the middle layer that contains the glands and the connective tissues. 4. Sensation. Nerve endings in the skin provide the body with a great deal of information about the outside environment.

5. Vitamin D Production. In the presence of sunlight or ultraviolet radiation, a substance in the skin is altered to produce vitamin D, which is necessary for the absorption of calcium and phosphate from food.
